Pink Beach offers traditional Bermudian fare but with a fresh twist such as Smoked yellow fin tuna over Bermuda cedar chips with vegetable sushi. Somerset rabbit or Pork tenderloin glazed with Bermuda hibiscus honey is another example of Chef Ryan's creativity.
I like to incorporate local products into our dishes such as char grilled marinated Wahoo with Tom Watson's Anise and Orange Salad topped with crisp Plantain or local Guinea chick Lobster with Mango Risotto and Mandarin Sauce. Another favorite combination is Bermuda Cedar smoked Yellow Fin Tuna and vine Tomato with a Spring Onion Salsa.
