You will need:
- 2 kg bread flour sifted
- 0.5 kg regular flour
- 2 teaspoons sugar
- 2 teaspoons salt
- 1 1/2 tablespoons dry yeast
- 1 cup olive oil
- 3 1/2 cups of warm water
- Assorted mushrooms (Shitake, Porcini and field)
- 2 cloves of garlic
Directions
Finely chop garlic and mushrooms and sauté in a little butter.
Mix with the olive oil and set aside for 12 hours.
Mix bread dough using the mushroom mixture and the remaining ingredients.
Allow dough to rise in a warm place for about 15 minutes.
Shape the dough into rolls on a flat baking pan sprayed with non-stick cooking oil.
Brush the top with egg wash (1 egg yolk mixed with water).
Bake at 375 until cooked and golden brown. (About 8-10 minutes although cooking time may vary depending on the number of rolls.)
Makes approximately 50 rolls. Enjoy!
